I was given a huge pink banana squash this year and didn't know what to do with it so I said what the heck I am going to throw it in the instant pot and it turned out awesome! I also blended much of it up as baby food. My son loved it there was so much flavor! It is all he would eat for a week! I never grew up eating much squash of any kind so it is definitely a food that I have come to appreciate and I am still learning how to cook with it. This is one of my new favorite ways.
